FEB 17, 18, 19: Meal Planning and Downton Abbey

My days have been filled to the brim and I am writing one post instead of three to catch up.  Here’s what has been happening.

FEB 17: Sunday – We went to church and indulged in some Rudy’s BBQ Takeaway. Then I cooked chicken verdes enchiladas, rice, and a peach cobbler for my in-laws and Great Uncle. That evening the kids had a wonderful time playing with their 103 Great Great Uncle. He speaks to them in Spanish and the kids keep on talking to him even though they don’t understand. He kept shooing us out of his room whenever we went to check on him and the kids.

After Daniel and I worked on our blog posts we happily watched the season premier of The Amazing Race. It is our favorite show. I was so disappointed to see teams give up and take a penalty in the very first leg. Geez. Right now we are cheering on Team YouTube and we already have a few teams that we are cheering against.

Then, THEN I watched the series finale of Downton Abbey. What!? I was so pissed. This interview on EW with the Exec Producer helped answer some of my questions. Sigh.

FEB 18: Monday –  I meal planned, grocery shopped, and I got to have an evening tea date with McKenna. She is so inspiring. We are similar paths and it’s fun to talk about our big dreams together.

Here are a few of the meals that I planned for this week.

Chicken and Dumplings with Speedy No Knead Bread (the chicken and dumplings are time intensive, but easy and tastes so amazing!)

Roasted Rosemary Chicken, Roasted Asparagus, Creamy Cauliflower Garlic Rice (I am loving Pinch of Yum’s blog and recipes!)

Salmon (because it is on sale for lent), broccoli, and potatoes

Crock Pot Coq Au Vin (it’s a cheap meal with chicken thighs and I had most of the other ingredients. I am hoping this will solve my clean kitchen Friday dilemma.)

Crock Pot Mushroom and Wild Rice Bisque (this recipe sounds so good. I can’t wait to try it!)

Kabocha Squash and Lentil Curry (another Pinch of Yum recipe and I LOVE lentils. My HEB excels at Mexican food ingredients, but doesn’t have much in the vein of Japanese vegetables, so I bought acorn squash instead. I am cooking it on Saturday to be eaten on Sunday after church.)

FEB 19: Tuesday – Today was pretty usual. Homeschool, cooking, laundry, and blog writing. You can read an update about how we are hustling to pay off our debt and how our homeschool is going over at Life With a Mission.
