One of Annabelle’s favorite books is The Three Little Pigs. We get to the end of the story where it says that the wolf won’t eat pigs anymore.

Annabelle says, “Why not? I like to eat pigs.”

I ask, “Oh really? What does pig taste like?”

“Sugar.”

This book is in the form of a parable and billed as “Twelve keys to successful living”.  I’m most interested to see how the book relates being a Christian with being a business owner. As the forward states, “We’re not called to divide our Sunday morning worship from our Monday morning staff meetings.”

My daughter, Annabelle, walked into my room at 5:30 a.m. Valentine’s morning. It was very evident right away that she was sick. My heart sunk for her. She was the only one in the house truly excited about Valentine’s Day. We had worked on her Valentine’s Day cards for her class the day before.

She spent most of the day on the couch. I didn’t have the heart to tell her that she was missing her Valentine’s party at school. I dropped off her cards at her school and Daniel picked up the cards from her classmates later in the afternoon. I could tell she was really sick, when she was not overjoyed with her bag of goodies. She normally loves that stuff.

Daniel had plans to take Annabelle out on a Daddy-Daughter date, so those plans are now postponed until she is better.

That morning Zander had a follow up for his ear infection. I am so thankful that Daniel has a flexible work schedule and could watch a sick Annabelle while I took Zander to his appointment. As I suspected Zander’s ear infection (now double ear infection) had not gone away. We got a new prescription. He already has a follow-up appointment with the ENT next week. So far his Audiologist and Pediatrician are recommending tubes. I just want him to get better.

Roman is still finishing up his prescription from strep last week.

These are fun times, I tell ya.

Thankfully Annabelle is returning to her old self today. She is talking non-stop, asking me to make her spaghetti, and to take her somewhere.

I told Daniel that I am so glad that we don’t celebrate Valentine’s Day as a couple, because yesterday would have been a disappointment if we had plans to celebrate. He spent the evening reading a book and working while I got the groceries that I didn’t get to buy earlier in the day. Just another day in paradise.

Here is our meal plan this week. I hope it gives you some ideas of what you could make for your family. I personally love looking at meal plans and seeing what others are cooking up.

Tuesday – I usually grocery shop on Tuesdays, but Annabelle was sick. Daniel picked up Bill Miller’s BBQ for us. Making dinner just wasn’t happening yesterday.

Wednesday – Our favorite food truck, Rickshaw Stop, gave me a jar of my favorite sauce – their tamarind sauce – to make something delicious. I am making Grilled Tamarind Shrimp Tacos with a side of corn. I will be blogging about this one later!

Thursday – Pork Chops with Garlic and Wine. New potatoes, zucchini. I saw this on The Pioneer Woman’s blog last week and I can not wait to make it! I love a good pork chop recipe. Tip: The grocery store sells cooking wine for around $2. While I am sure real wine would always taste best, I can’t beat the price of cooking wine.

Friday – Pulled Beef with Onions, cauliflower, asparagus. I am halving a large chuck roast that was on sale and making two meals. That is something $5 Dollar Dinners taught me.

Saturday – Adobo Chicken. Rice, broccoli. I love this Filipino dish and this month’s Cook’s Illustrated shares basic how-to instructions. I’ve made it in the past with another recipe, but it was too salty.

Sunday – Zesty Slow Cooker Beef Roast (to be cooked on Saturday). Green beans, cauliflower. I’m making this with the second half of the chuck roast.

Monday – Panko Baked Chicken Nuggets, homemade mac and cheese, fruit. The recipe says to fry the chicken. I am baking mine at 400 degrees. 15 minutes on each side.
