Meal Plan 2/21 – 2/27

Wow. Where has this week gone? It’s Friday, already!? I do love Fridays. It’s usually a laid back day with the kids, cleaning the house, and then Daniel and I have a date night at home.

I just reserved “The Help” at Redbox for us. Daniel wants to see it before the Oscars. I haven’t seen it since its opening weekend. I’m bummed that I probably won’t get to see “The Artist” before the Oscars. I am not sure the DVD will have the same experience as a theater, but I’ll have to make it work. The Oscars have snuck up on me this year.

On to the meals!

Tuesday – Baked chicken breasts marinaded and baked in Italian dressing. Cauliflower and new potatoes.

Wednesday –  Zesty Slow Cooker Beef Roast. This was on last week’s meal plan.  When I cooked it the top of the roast seemed to be burning in my crock pot, so I pulled it out before it was able to get tender. We put the beef in some corn tortillas with cheddar. It was good, but I won’t make it again.

This is not meat! It sort of messes with your head.

ThursdayVegetarian ‘Meat’loaf, parmesan cauliflower, and roasted asparagus. I am so pleased with how this turned out. It was filling and so good. I can’t remember who originally posted their meal plan with this on it, but I am glad I found this recipe. I will certainly be making this one again.

FridaySlow Cooker Char Siu Pork Roast, snap peas and carrots. The recipe is from Cooking Light magazine. This is in the crock pot right now. The marinade smells sweet with hints of soy and ginger. I hope it turns out well.

Saturday - Adobo Chicken. Rice, broccoli. This was on last week’s meal plan. I froze the chicken thighs. I think we ate at Chick-fil-a while we were out with the kids instead.

SundayPan Fried Pork Chops, new potatoes, and green beans.

Monday - Leftovers or breakfast for dinner.
