Here is our meal plan this week. I hope it gives you some ideas of what you could make for your family. I personally love looking at meal plans and seeing what others are cooking up.
Tuesday – I usually grocery shop on Tuesdays, but Annabelle was sick. Daniel picked up Bill Miller’s BBQ for us. Making dinner just wasn’t happening yesterday.
Wednesday – Our favorite food truck, Rickshaw Stop, gave me a jar of my favorite sauce – their tamarind sauce – to make something delicious. I am making Grilled Tamarind Shrimp Tacos with a side of corn. I will be blogging about this one later!
Thursday – Pork Chops with Garlic and Wine. New potatoes, zucchini. I saw this on The Pioneer Woman’s blog last week and I can not wait to make it! I love a good pork chop recipe. Tip: The grocery store sells cooking wine for around $2. While I am sure real wine would always taste best, I can’t beat the price of cooking wine.
Friday – Pulled Beef with Onions, cauliflower, asparagus. I am halving a large chuck roast that was on sale and making two meals. That is something $5 Dollar Dinners taught me.
Saturday – Adobo Chicken. Rice, broccoli. I love this Filipino dish and this month’s Cook’s Illustrated shares basic how-to instructions. I’ve made it in the past with another recipe, but it was too salty.
Sunday – Zesty Slow Cooker Beef Roast (to be cooked on Saturday). Green beans, cauliflower. I’m making this with the second half of the chuck roast.
Monday – Panko Baked Chicken Nuggets, homemade mac and cheese, fruit. The recipe says to fry the chicken. I am baking mine at 400 degrees. 15 minutes on each side.
